The English crown levied a tax on all malted barley spirits in the early 1800's. To pay less in taxes, John Jameson, began adding Un-malted barley to his mash before distilling. The flavor proved to be better tasting, more profitable, and remained the same throughout the years. You can thank taxes for the Jameson you drink today.
